I just made the best dinner ever. I made chicken enchiladas and beef fajitas. I love the corn tortillas that I bought to make the enchiladas and fajitas. Some prefer flour tortillas over the corn tortillas. We also made some rice and black beans with celantro. We are making our own margaritas and the kids will get a virgin margaritas. On the side we will have some sour cream, guacamole and fresh sliced limes. And then for desert we are doing a special flan recipe a friend gave me. My parents are visiting us for a couple of weeks and I want to spoil them while they are here. Tomorrow we will be taking them out site seeing for the day and then we are going to a place that is suppose to have the best fish and chips. My father will be so happy, because that is one of his favorite meals.
