I wanted to do something nice for my wife for Valentine’s day this year but it slipped up on me again. Just like it does every year. I knew I could get her the typical flowers and card that I get her every year but I had planned to do something different this time. But once again, I found myself with no new ideas and it was the evening of the 13th. Hmmmmm, this was not looking promising. I headed to the store hoping to have a stroke of genius on my way. I went to the candy isle and didn’t find anything that seemed like it would be any different than any other year then I headed to the baking isle. Not sure why I even decided to go there or what I thought I would find, but it turned out to be a great idea! No bake cheesecake mixes of every imaginable flavor were sitting there on the shelves telling me that my wife would love them! There were several flavors that I knew she would love but I settled on chocolate covered strawberry and pina colada. I went ahead and grabbed my usual flowers and card also and headed home to whip up two cheesecakes to surprise her with. My evening was a success! We never do anything over the top for the Valentine’s Day and this was just perfect to show her I love her and was thinking about her without spending a lot of extra money.

I just made the best dinner ever. I made chicken enchiladas and beef fajitas. I love the corn tortillas that I bought to make the enchiladas and fajitas. Some prefer flour tortillas over the corn tortillas. We also made some rice and black beans with celantro. We are making our own margaritas and the kids will get a virgin margaritas. On the side we will have some sour cream, guacamole and fresh sliced limes. And then for desert we are doing a special flan recipe a friend gave me. My parents are visiting us for a couple of weeks and I want to spoil them while they are here. Tomorrow we will be taking them out site seeing for the day and then we are going to a place that is suppose to have the best fish and chips.
